Background: Coopac (Cooperative Pour La Promotion Des Activities Café) is a Rwandan coffee cooperative operating around Lake Kivu. In 2003, Coopac constructed its first washing station and achieved Fair Trade certification; today, some 50 washing stations dot the northern lake landscape. Since 2010, Coopac has been financially supported by the TDC (Trade for Development Centre) to obtain organic certification, which is a three-year process.
We have featured COOPAC as a reserve in the past, and we are happy to be working with our friends and partners at Café Imports to bring this coffee back to Groundwork. This year’s coffee offers a very complex cup, typical of great coffees from Rwanda.
In the Cup: This light roast has a sparkling acidity akin to cranberries, mellowing out to a tangerine-like sweetness, a darjeeling tea-like clarity and structure, and rounded out by notes of cardamom, tamarind, and dry spice.
